Chocolate Energy Bites Recipe

This is one of the most requested snacks I make for new mamas…

A lovely, sweet, supportive and easy to grab little bite for all the times you need fuel—first thing in the morning before you have a chance to eat a full breakfast, getting through that midday slump when you need an extra burst or even in the middle of the night when you’re breastfeeding and starving! Flaxseed, oats and healthy fats help support all of your postpartum needs, including milk supply, while chocolate and honey both help increase oxytocin! Although I’ve never tried it, I’m sure that making a double batch and freezing the balls would work great to stash some snacks away for your postpartum.

Ingredients:

  • 1 cup sprouted oats (sprouted oats are optimal, you can also use old fashioned or whatever you have on hand)

  • 2/3 cup unsweetened shredded coconut

  • 1/2 cup unsweetened peanut butter

  • 1/2 cup ground flax seed (buy your flax whole and grind as needed! If you don’t have a spice grinder just throw it in the blender for a bit.)

  • 1/4-1/3 cup honey (depending on how sweet you like it)

  • 1/4 cup cocoa powder (the best quality you can afford)

  • 3 T unrefined coconut oil

  • 2 T chia or hemp seeds

  • 1 t vanilla extract

Optional Add-ins:

  • 2 T mini chocolate chips

  • 2 T cacao nibs

  • Roll balls in shredded coconut

Directions:

Combine all of the ingredients into a bowl to stir by hand or in the bowl of a stand mixer which is a bit easier to stir. Once it’s all combined well, throw the bowl in the fridge for about 20-30 minutes to chill which will make it easier to mold into balls.

Roll into 1-2 inch balls depending on how big of a snack you want to have on hand. Store in the refrigerator for a week although I doubt they’ll last that long!

Note: The balls will harden substantially once they’re completely cooled in the fridge due to the coconut oil in them solidifying when chilled. When they’re not chilled they will be a little softer/stickier.
